
Pablo's Legend
During the American invasion of Mexico a young Mexican soldier “Pablo” was captured and sentenced to be executed by firing squad. As was the tradition during this period the night before his execution he was granted his last meal. Pablo begged that he wished to cook his own meal if it was to be his last and his wish was granted.
While preparing his meal a Major General, Winfield Scott walked past the stockade in which he was being held and was overcome with the aromas that were drifting from his cell. He immediately demanded a taste of the food being prepared. That taste saved Pablo’s life as he was made personal chef to the major general for the balance of the war.
At the end of the war in 1848 the army was disbanded in what was to be known as Arizona which the Americans took possession of under the terms of the Mexican Cession. Pablo settled in a small settlement called Yuma on the banks of the Colorado River and opened his own kitchen.
It was in Yuma that his cooking was influenced by the many traders and explorers that used the mighty Colorado. After several years building a successful trade, Pablo yearned to move back home and did so moving back to his small home town of Patzcuaro in the heart of Mexico. It was here he bought the influence of Arizona back to Mexico and again developed a successful trade cooking the best of both worlds.TEX – MEX.
